Coming in at #1, Nick and Nora’s Melbourne is the place for a glass of celebratory bubbles. This Roaring ’20s-themed temple of decadence has walls of Champagne bottles and cocktails themed around the heroes and villains of a hard-boiled crime book. Also featuring Pearl Diver Cocktails & Oysters, Eau-de-Vie and Boilermaker House.

There’s no question as to why this spot takes the top on this list – walking in here feels like you’ve been transported back into the time of prohibition. There’s dark lighting, jazz, and an interior that could only be described using Shakespeare’s English.

The geographical centre of Sydney deserves a kick-ass cocktail bar and this is it. The champagne list is particularly strong but once you realise that it’s named after the protagonists of the classic novel The Thin Man, the noiresque vibe makes sense.

As one of the most recognised whisky bars in Melbourne, Eau Die Vie’s involvement in Nikka’s Discover The Hidden is no surprise. The bar team here have chosen Nikka’s Taketsuru Pure Malt to tell their side of the Nikka story, building a cocktail named after Taketsuru’s Scottish wife, Rita.

Valentine’s Day is just two weeks away, and what better way to show your loved one how much you care than by speaking their love language. Whether it’s through acts of service, physical touch, quality time, words of affirmation, or gifts, the Speakeasy Group has something special for your someone special.

When the bar re-opens at its new location in the heart of Sydney’s CBD, at Beneficial House in Brookfield Place — its entry will be across the laneway from Shell House — it will be accompanied by The Sanderson, an experience-driven restaurant with a sense of occasion named for Speakeasy Group co-owner Greg Sanderson.
