“SUBAG MARTINI”
Plymouth Gin, lime leaf vermouth, house umami brine, watermelon sake pearl
A martini that balances bright aromatics with savoury depth.
Plymouth Gin and lime leaf vermouth create a lifted, fragrant
base, enhanced by a measured house umami brine of garlic,
chilli and ginger. Finished with a delicate watermelon sake
pearl for a subtle savoury-sweet flourish.
About Plymouth Gin
Plymouth Gin is a historic English gin distilled at Black
Friars Distillery in Plymouth since 1793. Smooth and
rounded in profile, it offers gentle citrus, soft earthiness
and restrained juniper, creating a balanced, elegant
foundation for modern classics.
About Eau-De-Vie
A bar straight out of 1920s Prohibition America, from the moment you walk in, you are transported back to a much-forgotten era.
“THE ECLECTIC FIGALOO”
Basil-infused Ballantine’s Scotch, Massenez Liqueur
de Figue, black walnut bitters, sugar, balsamic glaze
and a whisper of sesame oil.
A celebration of the confounding and the unusual. At
its heart, basil-infused Scotch — fresh and herbaceous.
Balsamic follows to balm the soul; the divine fig, a
symbol of Babylonian enlightenment; black walnut
bitters delivering a robust wink that is just a little nutty.
Finally, a delicate anointing of sesame oil to bring the
elements into harmony. Best enjoyed in interesting company.
